Healthy Breakfast Recipes!

Hello There!

Sorry for the absence, I was waiting and planning to figure out what my next post should be, but I guess my new video would work as my icebreaker. 

I don't know about you but I love breakfast and brunch, and if asked I would totally say its my favourite meal of the day. Some of the things I love most in a breakfast are fruits, nuts and sweetness but all of these factors must be combined in a healthy and quick way. I don't have much time in the morning to fit in breakfast, as I jump out of bed and either go to work straight away or go ahead and film a new video for my YouTube. I'm also one of those people who prefer to get a little more time to sleep in rather than take things slow and paced in the early morning. So I searched far and wide, tested recipes and bought new ingredients to try out, adapted to taste or completely gave up on some but I have come up with my top 3 healthy breakfast recipes. And must I add, most if not all are super healthy, some even vegetarian, gluten-free, and sugar-free. So I should stop rambling on and let you in on these deliciousness, because in no time i guarantee you'll be opting for these every sunday morning. 

1) Banana + PB Toast

I fist discovered this dish going through my Tumblr, it looked so quick and easy to make I decided to give it a try... its so delicious! Do yourself a favour and try this out ASAP if you have't yet!

Ingridients:

1 ripe banana
1 slice of whole wheat bread
1 tbsp of peanut butter* (enough to spread on your toast)
1 tsp of chia seeds*

How To Prepare It:

-Toast your bread normally as you normally would and while you wait, go ahead and start cutting your banana in slices, once your toast is ready spread a generous amount of peanut butter all over your bread. (note: it's okay to indulge once in a while!!!) 
-Place the bananas slices side by side on you toast and top it off by sprinkling the chia seeds all over the bananas. 

*Note: If you chose so by any reason to not eat peanut butter, give almond butter a try. It tastes just as amazing and to some degree possess the same creamy consistence of pb so you wouldn't miss out on the amazing textures your taste buds will crave on!
It was a personal choice to eat this recipe with chia seeds, but you can adapt this to your own liking! I love chia seeds and put them in almost everything because of its high fibre and protein content, providing a drop in your cholesterol and on your waste measurement. 


DISCLAIMER: Not my picture, here just as an example! As you can see I eat it with chia seeds and the only reason why I dint't post my own picture was that my camera was not focusing properly and I wanted to present you guys with a quality picture.

2) Orange and Vanilla Overnight Oats

Like the taste of oatmeal and of fruity flavours? Then this recipe was made for you! Basically a twist on the classic oatmeal dish, this instead uses orange juice and adds healthy minerals found in sunflower  seeds and almonds, as well as any choice of fruits. Perfect as well for those of you lactose intolerants. This breakfast is so helpful if you're going back to school and like me is always on a rush in the morning, because you can actually prepare it all the night before! So when it's time to eat you just need to put it in a bowl and choose your toppings!

Ingredients:

1 3/4 cup of rolled oats (prefer gluten free)
1 tsp vanilla extract or powder
1 3/4 cup of orange juice 
1/2 cup sunflower or pumpkin seeds
1 cup water (for soaking the seeds)
4 tbsp shredded coconut 
fresh fruit for serving

How To Prepare It:

#1 Step- Before You Go To Bed: Mix the oats and vanilla in a bowl, adding orange juice and stirring it together until the oats are submerged in the juice (be careful to not over soak). With the seeds, put them together in a bowl and cover it with water. Place both bowls in the fridge overnight.
#2 Step- In the morning: Scoop out your amount of seeds and place them first in the bowl, in the middle the oats, and on top you can cover with your choice of toppings. I opted for blackberries because berries just scream breakfast, almonds, and coconut shredding for that extra sweetness. 

Save the left overs for the next mornings as this serves four, so you will have a comfortable amount of this recipe to last you 3-5 days int he fridge!





3) Gluten-Free Banana and Blueberry Pancakes

Different from your usual pancake recipe, these pancakes are sugar free and gluten free but yet extremely delicious, I might argue that they were the best pancakes I have ever tried in all of my 17 years of existence! If you have a little bit of extra time in the morning try it out! It took me about 10 minutes until I was sitting on my table devouring them, and these also can last you the whole week. Bad news though... they probably won't last that much time because you will find yourself eating them even when it isn't breakfast time.

Ingredients:

3 ripe bananas
6 eggs
1 cup of shredded coconut
1/2 cup of fresh blueberries 
1 tsp ground cinnamon 
coconut oil* (for frying)

How To Prepare It:

The Batter: Peel the bananas and mash them using a fork. Whip the eggs in a bowl and once ready, mix it together with the mashed bananas. Go ahead and add the coconut, blueberries and cinnamon then stir it all to combine using any blender of your choice, just prefer to not blend so much that your blueberries make you batter purple. 
The Frying: To fry the pancakes I strongly encourage you to buy yourself coconut oil*, as you can use it for almost anything and not just for frying, and it has so many healthy benefits for your body. Heat the pan on medium heat, with a full tsp of coconut oil wait for it to melt around the pan then pour a small portion of the batter, and flipping it over every 3-4 minutes.
-Top it off with a little bit more coconut if you will, flax seeds and maple syrup.
